On 19 December 2025, I had the pleasure of being invited to the grand opening of SeSun Grill & Beach Bar, the newest dining destination at Hyatt Regency Koh Samui. Set along the tranquil beachfront of the resort, SeSun offers more than just a dining experience, it is a thoughtfully curated journey that blends Thai heritage, coastal elegance, and contemporary hospitality.
From the moment I arrived, it was clear that this was an evening designed with intention, detail, and heart.
A Beachside Setting That Sets the Mood
SeSun Grill & Beach Bar is beautifully located right on the beach, allowing guests to enjoy uninterrupted ocean views while feeling the gentle island breeze. The venue’s design features a striking yet harmonious combination of deep blues and warm reds, reflecting the calmness of the sea and the vibrancy of Thai culture.
The overall ambiance feels relaxed yet refined, stylish without being overwhelming. Every element, from the bar area to the dining tables, feels cohesive and thoughtfully designed, inviting guests to slow down and fully immerse themselves in the experience.
A Cultural Welcome That Felt Truly Special
What made this evening particularly meaningful for me was the strong presence of Thai traditional culture throughout the event something I rarely experience at hospitality events in Koh Samui.
Upon arrival, I was warmly welcomed together with Mina from MinaEssence, and escorted into the restaurant with gracious hospitality. Guests were treated to free-flow drinks and beautifully presented canapés, setting a relaxed and celebratory tone for the night.
The attention to detail was evident everywhere, from the elegant table settings to the carefully curated lighting that complemented the beachfront surroundings perfectly.
Cocktails as a Live Performance
Before dinner, guests were invited to gather at the bar to witness SeSun’s professional bartenders preparing their signature cocktails. This was more than a drink service, it was a live performance.
Watching the bartenders work with precision, confidence, and flair added an interactive element to the evening, transforming the bar into a focal point of the experience and setting SeSun apart as a destination in its own right.
Dinner with Tradition, Flavour & Heart
As we moved into the dining area, the evening officially began with a Thai traditional dance performance, graceful, elegant, and deeply rooted in cultural storytelling. It was a rare and beautiful moment, one that truly honoured Thai heritage. Mina and I took the opportunity to capture photos with the dancers, appreciating the artistry and meaning behind their performance.
Following this, General Manager Mr. Pravin Kumar delivered the opening speech, warmly welcoming guests and sharing the vision behind SeSun, a place that celebrates flavour, culture, and meaningful experiences.
For dinner, I had the pleasure of sharing a table with Khun Nuittaharat Vanitcharoen, Director of the Tourism Authority of Thailand (Koh Samui), Lynn Payne from Sisters on Samui, and Mina from MinaEssence. It was a wonderful table to be part of — filled with engaging conversations, shared laughter, and a genuine appreciation for good food and meaningful connections. Moments like these are always a reminder of how special community and collaboration can be on this island.
The dinner itself was a true celebration of Thai cuisine, presented with care and pride:
A selection of four different appetizers, each offering distinct flavours and textures
A comforting yet bold Tom Yum soup, rich in aroma and perfectly balanced
For the main course, I chose:
Nua Yang Jim Jaew & Somtum & Khao Neaw Chiang Rai
(Grilled Wagyu sirloin with Samut Sakhon salt, Thai spicy sauce, papaya salad, and Chiang Rai sticky rice)
Every dish was thoughtfully prepared, flavourful, and deeply satisfying — a beautiful expression of Thai culinary tradition using premium ingredients. Dessert followed in the same spirit, completing the meal on a sweet and elegant note.
Entertainment That Kept the Night Alive
The entertainment continued well beyond dinner. Guests were treated to a vibrant fire show, lighting up the beachfront night with energy and excitement. Adding to the atmosphere was live music by Samui Soul Band, whose performance brought warmth, rhythm, and joy, making the evening feel festive and alive.
Before the night came to a close, SeSun also hosted a lucky draw for the guests, and I was invited to take part by choosing the lucky winner — a small but memorable moment that added a personal and joyful touch to an already special evening.
A Redefining Experience Worth Returning To
Personally, I truly loved this event. It felt intentional, culturally rich, and refreshingly different, with a strong Thai traditional touch that made the experience stand out. SeSun’s tagline, “Redefining the Experience,” genuinely reflects what they have created.
SeSun Grill & Beach Bar is not just a beautiful venue, it is a destination where culture, cuisine, and coastal charm come together seamlessly. I sincerely wish the entire team great success and highly recommend a visit, whether for a sunset cocktail, a special dinner, or simply to enjoy the ambiance.
